Ingredients
1/2 cup (1 stick) unsalted butter
1 cup sugar
Banana Bread Recipe
INGREDIENTS
2 eggs, well beaten
4 large, very ripe bananas, finely mashed
(you want them almost, but not quite, liquefied, with some small lumps left)
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
3/4 cup halved or broken walnuts (if desired)

DIRECTIONS
Preheat oven to 350
Cream together butter and sugar in large bowl. For best flavor and texture, use butter, not margarine.
Add eggs and mashed bananas. Combine well until light and fluffy.
Sift together flour, soda, and salt in a smaller bowl.
Add to creamed mixture and then add vanilla. Add walnuts if desired.
Fold the mixture with a spatula GENTLY until just mixed.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Let loaf cool for five to ten minutes and then remove from pan.
If you like, you can pour a walnut glaze over the loaf after it is baked. If you want the glaze to soak a little into the loaf, pour the glaze over it while the loaf is still hot.
If you want a thicker glaze on top of the loaf, let it cool before topping with glaze (see recipe for glaze below).
Glaze Topping
1/2 cup butter
1/2 cup white sugar
1/4 cup milk
1/2 tsp. vanilla
1/4 cup halved or broken walnuts
Hint: stir constantly!
Hint: don't over cook, or glaze will get crumbly.
Melt butter over low heat in a sauce pan. Add sugar and stir until dissolved in the butter. Add milk and bring to a slow, not a rolling, boil. Boil approximately 3 to 5 minutes (until mixture slightly thickens). Remove pan from heat and add vanilla. Add walnuts, if desired. Let the mixture sit for one or two minutes.
