It was the cause of the ten plagues of Egypt and the parting of the Red Sea. First, the explosion produced a fall-out of volcanic ash that would have produced a toxic bloom of algae in the River Nile; thus setting off a chain of events similar to those produced by pfisteriac. Then it would have generated a giant tidal wave that struck the Nile Delta. This incredibly powerful wave parting the 'reed sea' in the delta can explain how the story of the 'Red Sea' parting into two walls of water was written centuries later. Oh yes, now comes the interesting bit. I'm sure you won't mind me quoting from the Bible, so do you remember this bit? Exodus 13:21 "And the LORD went before them by day in a pillar of cloud to lead them along the way, and by night in a pillar of fire to give them light, that they might travel by day and by night." Just think, this was one whopper of an eruption. Far bigger than Krakatoa. During the day, the ash would have looked like a column of smoke and by night it would have looked like a pillar of fire. Easy to see how a group of primitive goat herders would mistake all this as evidence of God. Add a thousand years of retelling and you get all that woffle about God leading His chosen people out of Egypt. You do, though, make a valid point. The coincidence of the water receding at just the moment the Jews needed to cross does strain credulity a tad. So do other things in the story, like there being some 600,000 armed men, giving a population of around two million Jews undertaking the Exodus. Makes me wonder why they didn't stay put and take over Egypt.
