You can't make anyone do anything. But if you convince him that you'll do things he likes with him if he does things you like with you, then pick some physical activity as your choice. If he doesn't like the gym, then maybe a hike, or a bike ride or something he won't refuse to do. Make him stick to his side of the bargain and then do something he wants to. If it's fun for both of you to do things together it won't be a punishment to get him to exercise. As for eating, who cooks - you or him? When you supply the food make it healthy but tasty. If you show him ways to have fun being physical and enjoy eating healthier you can turn him around.
