seri8888: 'all asian' is an over generalisation. There are 48 Asian countries currently, from Indian to Indonesia. Perhaps many asians do their coogee that way maybe, idk for sure.

I do like your suggestion on "...saute garlic , onion and ginger then put the bones of chicken and pork, boil for an hour with coriander roots , with white radish to make the soup sweet..." might give it a go but with the overnight method coogee, as I love this texture better, but that is just me

AretoNyx: True ingredients matter. Spices vary in location and how they are grown can change flavor in strength and such slightly. After all the spicy peppers vary so many ways and how people taste vary as well.

smilingkiss: yes, your tasting is different from mine for we make a different mixture from you, here we do not use sweet bell peppers as much as we use Thai chilies. For us, we want the aroma of the chili not just to be hot and spicey. India got the hottest chili in the world even us Thais cannot eat it as snacks We use different chilies for different use or we put different chilies to give it more volume in taste.

seri8888: Tips of the month

*Foods store better flatter. Save freezer space, faster to freeze and defrost too. So soups, stews or mince meats put them in freezer bags flat

*Defrost faster on aluminium sheet tray, you can also quicken the defrosting process with meat by putting it under cold running water

*To remove slippery bits of egg shell, use the empty half of the egg shell to spoon it out.

*Fill a bottle or cointainer with some chopped garlic, shallot, Dijon mustard, salt and pepper, then fill 1/4 with canola oil, 1/4 with extra virgin olive oil, 1/4 balsamic vinegar and 1/4 sherry vinegar, lastly add soy sauce, shake well = Soy-Balsamic Vinaigrette

seri8888: Bagedil/Pekedel (Potatoe Patty)

Bought 4kg bag of potatoes yesterday for 70c cents only! woohoo, now, how am I going to cook with them? What recipes?

One of my family favourite is bagedil

1kg potatoes quartered and fry
>Mash them up
Add salt and pepper to your taste, add a bit at a time and keeps tasting until your liking.

About 2-3 teaspoons salt and 1 teaspoons pepper (I used white pepper)

Add 2 tablespoons finely minced or chopped celery leave and stalk
*Use Chinese celery if you can find them from Asian grocery shop.
They are small celery but with much stronger smell

Add 400 - 500 gram cooked beef mince (skips this if you want to make it vegetarian meal)

You can used any meat but beef mince is the traditional meat

Mould them into balls with your hands and slightly flatten them

Dip them in eggs white (about 2-3 eggs)
Some people used the whole eggs but I find just using the white make them crispier

If you use whole eggs make sure you mix/ whip the eggs first

Deep fry them till slightly brown

Eat as a snack or with rice

This video used raw mince meat, corn starch and eggs in it mixture, I find that my bagedil's mixture easily shaped without corn starch and eggs. I only used egg white to dip them in for crispy outside
