harlett anathema: i'm a comfort food cook...my only lite & easy is my fresh fruit sorbets..I throw my fruit of choice into my kitchen ninja food processor ..after peeling pitting and or stemming of course...mix with filtered cold water and a very lite splash of lemon juice and a splash of simple syrup..then freeze..

simple syrup is sugar melted into water... 1 cup water and 1 cup sugar...bring too a boil..cool..keeps forever in the frig..i sweeten my ice teas with simple syrup..

for a main meal.....i will cut the stem circle off my fresh tomatoes then throw them into that kitchen ninja and give it a few whirls...throw that into a large sauce pan.. then ninja some yellow onion,bell peppers and celery..into a fine chopped mess.. throw them into that sauce pan.. salt & pepper too taste.. then simmer till the tomatoes taste cooked not raw...walla you just made stewed tomatoes...a dozen nice size tomatoes any kind, a medium size of onion bell pepper and a couple 1 or 2 stalks of celery..

now you can brown..ground beef..turkey,etc etc...throw that into your stewed tomatoes along with the pan juices made from browning your meat or poultry. walla you just made your own hamburger or poultry helper..

now just choose what are you going serve it over some kind of rice.. egg noodle, macaroni such as elbow ..

Gosling09: Red Cabbage, cucumber, celery, carrots, leaks, olives, tomatoes, green peppers(red and yellow) cottage cheese. Dressing : olive oil, mustard, honey, lemon juice, salt pepper. Slice everything chiffonade style, mix and dress! For a bit more protein opt for some beans, chick peas, boiled eggs, tuna or salmon. for a bit of crunch add some plain nuts of your choice.

Big Bopper: Hummus is excellent food! And easy...whiz up a can of chickpeas water and all, a clove of garlic, a glob of tahini, some cumin, some olive oil, salt, lemon juice, and...oh yeah! Adjust ingredients to taste. Roasted garlic is good but I like a bit of bite, too.

I like to freeze my homemade pizza in slices that reheat in a covered dry pan just like they were fresh. I make a pound or two of spicy beef - oregano, onion, garlic, chillies, cumin, coriander etc.- freeze it flat in a ziploc then break a piece off when needed, have it with rice or in a tortilla...or on a salad...or in a sandwich.

My 'salad' is more like a coleslaw: green and red cabbage sliced fine; with peppers, tiny amounts of onion and garlic, celery, any veg, packed airtight with no dressing and it keeps in the fridge for a week or more.. Serve it as is or with whatever you want for dressing, oil and vinegar, mayo, dijon mustard, in a sandwich, on a burger, in a big bowl with canned salmon, with grilled chicken...

Healthy is the way I eat. Gotta have a little of everything, except sugar. Eat sugar; eat less of everything else, and that doesn't work for me. I've tried going vegetarian, but when I've tried...that is all I do: plow, plant, water, weed, pick, peel, pare, eat and clean up. There is more to life than eating just vegetables! A little of everything, but lots of exersise.

Big Bopper: Garlic scape pesto

A handful of garlic scapes, the curly stem that will flower if given the chance.
A handful of basil leaves
A handful of pine nuts browned in a dry pan
A few tablespoons of grated Parmesan
1/4 cup olive oil
salt and pepper

Combine all ingredients but the oil. Blend in food processor gradually adding the oil. Taste and adjust anything that needs it.

Serve pesto with pasta, some fresh veggies and barbecued chicken, or poached fish, or beef steak.

Big Bopper: Baby bok choy

These are very convenient. Rinse them and slice a few times lengthwise. Into a hot pan with coconut oil, a few drops of sesame oil, and a few drops of soy. Onion or garlic and/or ginger are great. A vegetable side dish that takes seconds. You could add broccoli or snow peas and go for the stir fry thang...

Big Bopper:
Baby bok choy...again.

Rinse well. Quarter them and toss into a pre-heated medium pan with oil. Sizzle all over. Add sesame oil and soy. Sizzle all over, tossing it a bit. Add chopped garlic. Toss more and let cook on low for a few minutes tossing periodically until garlic is soft and sweet. Tasty, healthy and nutritious.
