Simple and Quick recipes for Healthy foods Neanderthal Gangsta: We know a good diet consists of small portions of healthy food through-out the day. So what meals do you prepare to have around for when you get hungry? Please share simple and quick recipes that you enjoy, that make for a healthy lifestyle. MockingBirdMoment: I love quick go to snacks, per say. Apples and pb is the best. You just slice the apple into horizontal layers, layer them with pb, wrap or put into a container and you're good to go. Frozen grapes or berries .... even bananas are delish!! Chicken lettuce wraps are also good. You substitute bread with lettuce, combine chicken/turkey (plain is healthiest) with greek yogurt, sliced apples, grapes, celery, raisins and a wee bit of lemon juice. I love them when I have a busy day, they don't have to be big to be filling and they're incredibly simple to prepare. PHRIENDLY_PREDATOR: I've started viewing salads as the main meal. It's like a blank canvas you can do so much and in so many combinations! Lately I've been obsessed with chickpeas and avocados. One of my favorite salads that I make is: heirloom tomatoes, red onions, avocados, cucumber, baby spinach, chickpeas and just cider vinegar and oil. Done. You can also add chopped boiled chicken to it, you can add cold shrimp etc. Vi0let: Fast appetizer type food if you like spicy things - grab some jalepenos, slice them in half, fill with cream cheese or a little cheddar, throw under the broiler until the cheese melts. If you use light cream cheese, these poppers are super simple and low cal. Lily__: I always keep hummus around. Its a great snack with whole grain crackers. My favorite is jalapeno hummus. Deer Jesus: I live by hummus and wheat thins being a go to snack to munch on whether to curb your appetite or as a side to a meal. Frozen veggies is another awesome staple because you can throw a handful in with boiling pasta and an Alfredo sauce and that's rad or make Mac and cheese and that provides you with your daily serving of veggies. You can do the same thing with soup too like tomato soup and the veggies. And mushrooms and onions. Deer Jesus: I'd really love to invest in a processor or a blender and a toaster oven because you can be so innovative with those items and a blender can double as both a poor man processor and margarita central Vi0let: Also, marinated veggies - throw some broccoli or mushrooms into an oil and vinegar dressing (again, light) and let it sit in your fridge until you get snackish - then attack! I_CaRe_NoT: Juices. Papaya juice, pineapple juice, apple juice, etc. Wash, peal, slice, blend... with no sugar. Then drink AlishaLucky: Little mini quiches made in muffin tins. They are filling, you can eat them hot and cold and they are portion controlled, hide epic amounts of veggies for the kids and can be a main meal or a snack. If you want me to post my recipe, i shall. It doesn't have a pastry... so lower carbs too. AlishaLucky: No Pastry Quiche 5 eggs 2 slices of lean ham 1 onion, diced 1/2 cup of low fat grated cheese 1 1/2 cups of low fat milk 1/2 cup self raising flower following optional but this is what I use 1/4 cup peas 1/4 cup frozen corn 1/4 diced capsicum 3-5 sliced mushrooms Mix all ingridents together in a large bowl. Either pour into a lightly oiled quiche or separate into muffin tins Bake in a 180 degree oven (I think that's 350F) for 30mins (i dont have a fan forced, so check in 15mins and then 20mins etc- burnt quiche is foul). The self raising flour magically settles to the bottom and makes it solid enough to hold well... but no pastry. Simple, delicious and nutritious. It was about $400 and believe me, that's very expensive back then for a blender. Normal month's rent for a nice apartment in L.A. at the time was about $250. I don't know how I got my parents to buy it for me, but it's been working for 35 years. Okay, next question. Does anyone here make dinner on the weekends for the rest of the week? ElleBelle: Here's an easy breezy one, fairly low in carbs I think. You'll need burrito wrappers, spreadable cheese (like Alouette), sliced turkey (the lunchmeat), and pickle spears. Spread the cheese all over the burrito wrapper (one side, don't flip it over). Layer slices of turkey to cover the wrap. Place a pickle spear on one end and roll it inside the wrapper, all the way across. Cut across in 1-2 inch bite size pieces. I know it sounds like a weiiiiiirrrrrrrdd combo, but trust me, its yummy!! MercuryDragon: Pretty much all I eat is just basic foods in their pure forms. No recipes used and very little cooking involved unless cooking for others. I know Alisha has lots of good recipes in her repertoire however. In general: Raw veggies & fruits for the vitamins, fiber, healthy carbs, etc. Nonfat Greek yogurt and vitamin D enriched skim milk for the calcium, protein, etc. Baked chicken livers for the heme iron (metabolizes into the blood better than non heme iron in vegetables).
