Depending on the time of month that you come. There are plenty of day trips you can do to the Hunter Valley, Blue Mountains, Byron etc. The Harbour Bridge Climb is a total experience also. If your in Sydney check out wicked tours as they organise alot of day trips etc and activities whilst in Australia.
